Toad in the hole without eggs sounds like a challenge, but a batter of flour, gram flour, baking powder and soya milk poured into smoking-hot oil gives you crisp, golden edges and a soft middle. It won't tower quite like the classic, but with good sausages and a jug of onion gravy, nobody complains.
Ingredients
servings
For 4 servings.
- 8 vegan sausages
- 4 tbsp vegetable oil
- 140g plain flour
- 3 tbsp gram (chickpea) flour
- 1½ tsp baking powder
- ½ tsp salt
- 300ml unsweetened soya milk
- 1 tsp wholegrain mustard
- few sprigs fresh thyme (leaves picked)
- to serve onion gravy (see our sausage and mash recipe)
- to serve greens or peas
Scaled amounts are rounded. Cooking times usually stay the same, but a bigger batch may need a bigger pan or an extra few minutes.
Method
- Whisk the plain flour, gram flour, baking powder and salt together. Gradually whisk in the soya milk and mustard to make a smooth batter the thickness of double cream. Rest for 15 minutes.
- Heat the oven to 220°C (200°C fan), gas 7. Put the oil in a roasting tin about 20 × 30cm and heat in the oven for 10 minutes.
- Add the sausages to the hot oil, turn to coat and roast for 10 minutes until they start to brown.
- Take the tin out, working quickly and carefully, and pour the batter around the sausages — it should sizzle. Scatter over the thyme.
- Return to the oven and bake for 25–30 minutes until the batter is golden and crisp at the edges. Don't open the oven door for the first 20 minutes.
- Check the sausages are piping hot, then cut into portions and serve with onion gravy and greens.
Good to know
- The oil must be smoking hot when the batter goes in — that's what gives you crisp edges.
- Use a metal tin rather than ceramic; it gets hotter and gives a better crust.
Check every label: stocks, sauces, breads and pastries sometimes contain milk, egg or fish. Cook until piping hot all the way through.
