Bakery-style sausage rolls you can knock up in half an hour. Ready-rolled puff pastry is your friend here — plenty of shop-bought sheets are made with vegetable fats rather than butter. A little fried onion and sage in the filling makes all the difference.
Ingredients
servings
For 12 servings.
- 1 × 320g sheet ready-rolled puff pastry (check the label — choose one made without butter)
- 400g vegan sausages or vegan sausage meat (skins removed if they have them)
- 1 tbsp vegetable oil
- 1 small onion (very finely chopped)
- 1 tsp dried sage
- ½ tsp black pepper
- 1 tsp English mustard (optional)
- 2 tbsp unsweetened plant milk (for the glaze)
- 1 tsp maple syrup (for the glaze)
- 1 tsp fennel or sesame seeds (optional)
Scaled amounts are rounded. Cooking times usually stay the same, but a bigger batch may need a bigger pan or an extra few minutes.
Method
- Heat the oven to 200°C (180°C fan), gas 6 and line a baking tray.
- Fry the onion in the oil for 5 minutes until soft. Cool slightly, then mix into the sausage meat with the sage, pepper and mustard.
- Unroll the pastry and cut it in half lengthways to make two long strips. Divide the filling between them, shaping it into a sausage along one long edge of each strip.
- Mix the plant milk and maple syrup and brush along the other edge. Roll the pastry over the filling and press to seal, with the seam underneath. Crimp the join with a fork.
- Cut each log into 6 pieces, place on the tray, make two small slashes on top of each and brush with the glaze. Sprinkle with seeds, if using.
- Bake for 25–30 minutes until puffed and deep golden and the filling is piping hot. Cool for 5 minutes before eating.
Good to know
- Keep the pastry cold until the last moment — warm pastry won't puff as well.
- Freeze unbaked rolls on a tray, then bag them. Bake from frozen, adding 10 minutes and checking they're piping hot in the middle.
Check every label: stocks, sauces, breads and pastries sometimes contain milk, egg or fish. Cook until piping hot all the way through.
