Fajitas are a build-your-own party. The trick is a very hot pan and not crowding it, so the vegan chicken and veg char rather than stew. Make your own spice mix — it takes a minute and tastes miles better than a packet.
Ingredients
servings
For 4 servings.
- 350g vegan chicken-style strips or pieces
- 3 peppers (mixed colours, sliced)
- 1 large red onion (sliced)
- 2 tbsp vegetable oil
- 2 tsp smoked paprika (for the spice mix)
- 1 tsp ground cumin (for the spice mix)
- 1 tsp garlic powder (for the spice mix)
- ½ tsp chilli powder (for the spice mix)
- 1 tsp dried oregano (for the spice mix)
- 1 tsp brown sugar (for the spice mix)
- ½ tsp salt (for the spice mix)
- 1 lime (juiced)
- 8 flour tortillas (check they're vegan)
- to serve guacamole, tomato salsa, vegan soured cream, grated vegan cheese and coriander
Scaled amounts are rounded. Cooking times usually stay the same, but a bigger batch may need a bigger pan or an extra few minutes.
Method
- Mix all the spice mix ingredients together.
- Toss the vegan chicken with half the spice mix and 1 tbsp oil.
- Heat a large frying pan or griddle over a high heat until smoking. Cook the chicken in a single layer for 4–5 minutes, turning, until charred at the edges and piping hot. Tip onto a plate.
- Add the remaining oil, the peppers and onion, and the rest of the spice mix. Cook over a high heat for 6–8 minutes until softened with some charred bits.
- Return the chicken to the pan, squeeze over the lime juice and toss.
- Warm the tortillas in a dry pan or wrapped in foil in a low oven. Bring the sizzling pan to the table with all the toppings and let everyone build their own.
Good to know
- Cook in batches if your pan isn't big enough — overcrowding makes everything steam.
- Leftovers make brilliant quesadillas the next day with a handful of vegan cheese.
Check every label: stocks, sauces, breads and pastries sometimes contain milk, egg or fish. Cook until piping hot all the way through.
